Applying Experimental Economics to Obesity in the Family Household AgEcon

The objective of this study is to identify experimental economic tools that can be employed to explain the role of economic behavior in overweight and obesity in the household. We identify three economic experiments that can be used to understand how parent-child economic relationships relate to obesity. Loss aversion experiments are discussed as a tool to understand challenges some individuals face in achieving a healthy diet. Finally, testbed experiments are introduced as a means to test and understand new policies and incentives for better health at the household level.

This study uses a logistic regression to analyze the 2004-2005 Arkansas Center for Health Improvement body mass index data from four school districts in Arkansas. We conclude that the probability of elementary school children being overweight or at risk of being overweight depends on economic factors, demographics, and food availability.

A focus group study with 37 residents of Manhattan, Kansas, was conducted to examine consumers' risk perceptions of foodborne illnesses from beef. Determining the Impact of Food Price and Income Changes on Obesity AgEcon

Despite the significant rise in obesity in the U.S., economic research on obesity is still in its infancy. This paper employs a microeconomic approach to investigate the effects of price and income changes on weight in an effort to determine how a high-calorie food tax, a low-calorie food subsidy, and/or an income changes affect body weight. Although raising the price of high-calorie food typically will likely lead to decreased demand for such goods; it is not clear that such an outcome will actually reduce weight. This study determines the learning benefit of correcting missed exam questions. The results show that in addition to exams being an assessment tool, they can also be used as a tool for student learning. Economic Factors and Body Weight: An Empirical Analysis AgEcon

With this study, we investigate the effects of changes in economic factors on body weight by constructing a utility theoretic model. The model is empirically estimated by combining data on individuals’ body weight, demographic and physical activity information, and statelevel measures pertaining to the prices of food away from home, food at home, and wages. By combining these data sources, we aim to estimate directly the weight effects of price and income changes. The empirical analysis suggests that decreasing the price of food at home could decrease body weight, a finding which has important public policy implications.

Fruit and Vegetable Consumption among College Students in Arkansas and Florida: Food Culture vs. Health Knowledge AgEcon

This study determines the impact of demographics, dietary and health knowledge, and food culture on fruit and vegetable consumption of college students in Arkansas and Florida. Our empirical analysis demonstrates that food culture significantly impacts consumption of fruits and vegetables; a finding which emphasizes the need to target cultural aspects when developing effective and efficient management of agribusiness firms. Understanding the antecedents to consumption for products like fruits and vegetables is important to agribusiness industry, policy makers and organizations interested in evaluating the effectiveness of health education in promoting college students' health and decreasing the trends to obesity.

Relating Behavioral Elements of Household Food Negotiation to Childhood Overweight and Obesity AgEcon

Researchers working in the fields of family studies and psychology show motherchild relationship dynamics affect the occurrence of childhood overweight and obesity. Many of the significant behaviors they identify relate to negotiation and generosity norms in the household. The primary objective of this study is to test the value of altruistic and collective models of household behavior using the dictator and ‘carrotstick’ laboratory experiments. Changes in the American lifestyle are putting more individuals at risk due to the declining quality of their diets. In the last 20 years, the readily available high-fat foods (e.g., "fast foods") combined with the decreased caloric requirements due to lower physical activity levels is assumed to be the major factor in the sharp rise in the prevalence of obesity. The typical away-from-home meal is less healthy than food at home, since it tends to contain more total fat and saturated fat, less calcium, fiber, and iron, and fewer servings of fruits and vegetables. Conventionally, fruits and vegetables have been the major source of micronutrients. However, with the rising availability of nutritional supplements, U.S. consumers no longer need to rely on food alone for their nutritional needs. Time-pressured consumers with limited cooking skills and nutrition knowledge may find it easier to take vitamin supplements. The Impact of Food Environment on Branded vs. Private Label Produce Choice AgEcon

Over the past two decades, U.S. food retailers are providing more organic private label foods (PLs) which are directly competing with the National Brand (NB) products. From a policy perspective, an increased availability of high-quality PL products might provide consumers with a more affordable way to cover their produce consumption. Using a two-step Heckman selection model, we estimate the impact of purchase information, demographics, and food environment on the purchasing likelihood and expenditure shares of PL organic vs. conventional spinach. Results show that food context, most notably food availability, access, and adult obesity rate, significantly influences organic PL spinach choice.

Using Experimental Economics to Measure the Role of Parental Generosity and Food Control in Childhood Obesity AgEcon

This research uses experimental economics to measure the effect of parental generosity and child response on childhood overweight and obesity. The 'Carrot-Stick' experiment, an adaptation of the standard dictator game in which the respondent (the child) can punish or reward the dictator (the parent) based on the dictator's generosity, served as basis of our examination. Two treatments are conducted, in which the child spends his or her earnings on non-food and food items. Our empirical analysis shows significant relationships between parental weight and their level of generosity regarding food items.
